L(+) Potassium Bitartrate

Potassium bitartrate, also known as potassium hydrogen tartrate, is a byproduct of winemaking. In cooking it is known as cream of tartar. It is the potassium acid salt of Tartaric Acid (a carboxylic acid). It can be used in baking or as a cleaning solution (when mixed with an acidic solution such as lemon juice or white vinegar).

Chemical Name Potassium bitartrate;
L (+)-Potassium hydrogen tartrate;
Butanedioic acid, 2,3-dihydroxy- (R- (R*, R*))-, monopotassium salt;
Butanedioic acid, 2,3-dihydroxy- (2R,3R)-, potassium salt (1:1);
potassium hydrogen tartrate;
cream of tartar;
potassium acid tartrate;
2,3-dihydroxy- (r-(r*, r*))-butanedioicacimonopotassiumsalt
Molecular Formula KC4H5O6
Structural formula
Molecular Weight 188.17
CAS No 868-14-4
Character Colorless or white crystalline powder; odorless, with a little pleasant refreshing acidity; soluble in dilute mineral acids, alkali solution or borax solution; insoluble in ethanol or acetic acid
Storage Keep in a room temperature, avoid light, ventilated and dry place. Seal preservation
Quality Standard GB 25556-2010、FCC XI、OIV
Term of validity 2 years

APPLICATIONS

  • Chemical engineering

    Potassium tartrate is used in the manufacture of Tartaric Acid salts, such as antimony potassium tartrate and potassium tartrate, etc.

  • Food

    It is used in the food industry such as beer foaming agent, food acid flavour agent, correction agent, etc. The acidity is 1.3 times of citric acid, especially suitable used as acidulant for grape juice. This product is identified by the FAO/WHO expert committee as an excellent food additive.

  • Light industries

    It also plays an important role in tanning, photography, glass, enamel, telecommunications equipment and other industries.

  • Laboratory

    It is also used for the determination of bismuth, aluminium and nickel; the preparation of microbiological media. It is also widely used in buffer solutions.
